Beijing to Xian, then Xian to Shanghai. How far in advance can I book tickets? Can you send tickets to my UK address or do you deliver to the hotel in Beijing?

Hi, you may wait for several days. As the railway administration said, G trains between Beijing and Xian will start on Dec 26, which will cost about 5 hrs.
