Well, yes. Putian South Shaolin Temple, Quanzhou South Shaolin and Fuqing South Shaolin Temple are in Fujian. They are located at Putian, Quanzhou and Fujing of Fukien. I suggest you take train at Xiamen to any of the three cities first. Then you can easily take the pubilc bus or taxi to the Shaolin Temple.
You can go to Xiamen or Quanzhou for a trip to visit the Gulangyu, South Putuo Temple, Qingyuan Temple etc.

Hi, Mary. Putian Shaolin Temple seems to be the most popular one, but you can find the true culture at Quanzhou Shaolin Temple, which is also considered the one with the longest history. So glad to tell you that you can travel in Quanzhou then.
Actually, one to two days are enough for Quanzhou trip. You can also go to the nearby Xiamen city for an interesting travel for two days. And wuyishan and the nearby scenic spots can be covered within three days. Don't worry~
Nice trip!
