Single or Double Entry

We will be travelling to Bangkok in February and stopping for three days in Beijing. On the way home, we will be stopped in Beijing for 9 hours. We may like to leave the airport and go for dinner in Beijing on our second stop. Do I need a single entry or a double entry visa?
