I am planning 7 day visit next year. Is this too long of a stay for that area?

What are the interesting sites that I can visit during this time?

Hi, 7 days is a little bit long. Actually, 3 to 4 days are OK and you may visit Mogao Caves, Yumenguan Pass, Yangguan Pass, Echoing-sand Dune and take a camel-ride to Crescent Lake.
