About:China Visa Entries / Validity / Duration of Stay

double entry visa..

USA to China equals 1 entry....Hong Kong equals 1 entry??...Japan to China equals 1 entry..
Does that require a multi entry visa or a double entry??

Leaving for HK counts an exit, you need an entry to go back from HK. So, you need a multiple entry.

No, entering HK does not count as an entry. So US to China=1 entry, China to Hong Kong, Hong Kong to Japan, Japan to China=1 entry. Double would be fine, however, no reason not to get multiple if you are US citizen, as it is same price.
