About:Chinese Embassy in Canada

Must all documents submitted for visa be in Chinese ?

What needs to be notarized and where? Can I send application to service center by traceable snail mail? Do I send payment with it as well?

No, there is no requirement for documents in Chinese. As I know, you need to send applicaiton through Canada Post Xpresspost. You can refer to http://www.visaforchina.org/YTO_EN/applybypost/253953.shtml for more details.
