Do I change train from Airport line at Central to go tsim Sha Sui for The Kowloon Hotel? Cost?

No, you do not need to do that. You can take the Airport Express to reach Kowloon Station where there is the free shuttle bus for Kowloon Hotel, so you can take the free shuttle bus instead of the transfer in Central.1
