I would like to know where I could renew my passport within Melbourne Australia.

You can submit your HKSAR passport renewal application to Chinese Consulate in Melbourne . They will send the application back to Hong Kong. But first visit the website of HK Immigration Department, download the form ID843, required documents are also available on their website.
