Could you please advise me the difference between a double- entry /multi -entry visa ?

Double entry allows two entries only to China during its validity. But with multiple visa, you can enter and exit China anytime you want during its validity, with no limitation on entries. So, multiple entry visa requires official invitation letter from China, and generally it may be not applicable for the first time visitors.
