Checking in bags in town and travelling separately later to board Cathay Pacific Flight

Since the hotel check out time is 11 a.m., I wish to check in my bags in Hong Kong on the day of departure in the morning ;tour the town during the day and travel light by the Airport Express late in the evening to board Cathay Pacific flight . Am I permitted to do so?
