There is no direct train from Shenzhen to Shantou, so you need to transit at Guangzhou East Railway Station. It will take you for about 12 hours to reach Shantou.
Coach is suggested. You can take the long distance bus from Futian Bus Station in Shenzhen to Shantou. It is comfortable and will cost your 60R RMB. In this way, you do not need to transfer during the journey.0
