If the marriage will takes place in PRC, you need to bring your documents such us your live birth, passport, if your single you need to show your legal capacity of getting married, if your a divorced you need to present the proof of it, then you bring those documents to your own embassy in PRC. They will provide you the endorsement to translate your documents into chinese then after that if everything is ok they will provide your documents.
Then bring your documents to your girlfriend's hometown, find the proper place of marriage registry for foreigner that will tie a knot with the locals. Take a photo etc.... then fill up forms, line up, take a ceremony, pay then they will release your marriage certificate immediately.
This is just base to my experience, but i don't know if the procedure are still the same at the moment, before going to PRC be sure to contact the chinese embassy first so that you will be aware of the proper documents that you need .
