Sorry that I'm not very clear about you meaning. Will you transit an airport in China or an airport in Australia? Anyway, you don't need any visa for a 7-hour transit at a Chinese airport if you won't go out of the airport. Australian passport holders are even visa free for a less than 48 hours transit in Shanghai Pudong or Hongqiao Airport (They are allowed to leave the airport to visit the city.).

You want to go out, right? Then you can apply a stay permit at the Guangzhou airport. With the permit, you can go out the airport to see the city.
