Sharon, you can apply at the Chinese Embassy in Tokyo. To remind you, you need to provide the following documents:
(1) Your original passport with a validity of 6 months and at least two blank pages, the copy of the photo page and the copy of the page with record of entering Japan legally.
(2) Completed filled visa application form in Chinese and English both;
(3) A recent photo within 6 months, 1 of 2-inch photo;
(4) Invitation Letter issued by a company or a person in China. If you can not get invitation letter, you can just provide schedule, tickets and hotel order insteas.

But also another option: A single entry China visa is valid for 3 momths after issue date. So, if your holiday in Japan or the gap before entering China is shorter than 3 months, you can apply for a China visa in advance in Australia. It is easier for you.
