How long does a visitor visa application take to process?

1. I am an Australian Permanent resident. What other documents do I need to submit other than the ones mentioned about - do I need to provide evidence such as my pay advice, bank statement, invitation letter from friend, etc ?

2. Do I need to apply for HK SAR (double entry) if I want to travel China via HK?

You don't need to provide evidence such as your pay advice, bank statement, invitation letter from friends, etc.

Can you tell me your nationality? As I know, nationals of more than 160 countries don't need a visa to Hong Kong, you are an Australian Permanent resident, but what passport do you hold?

You need to apply for both a Kong visa and China visa. For HK, if you plan to enter Hk twice, a double visa is required. For China mainland visa, you need to provide valid Australian visa as well as entry record to the Consulate General (Original and the copy). Those documents mentioned above would be helpful if you have. Generally, visa processing takes about 4 working days, but for HK visa, it may takes about few weeks if mailing application to HK Immigration department for approval is needed.
