Which Chinese embassy in France, as a UK passport holder, do I need to apply for a Chinese Visa.

Yes, you do have to apply for a visa if you plan to go to China.

Sorry for my misunderstanding. You may just sumit your visa applicaion to the right oversea Chinese commossion according to the diviosion of the consular districts of Chinese consulates in France on this page https://www.travelchinaguide.com/embassy/france.htm
