Can I buy a ticket at Guangzhou South train station for Humen / Shenzhen north on the day of travel?

Yes, you can buy the tickets at the Guangzhou south station, since trains of Guangzhou south train / Shenzhen north operate about every 30 minutes from 07:00 to 22:00 every day.
