When to apply for VISA

Hi, we are canadian citizens and live in vancouver. We are planning to visit China for two week holidays in late September, 2012. I have our air tickets but hotels and detail itinerary for the tour have not been booked yet. I have downloaded the VISA application form. Approximately when should we apply for a single entry VISA?
