Mainland China and Hong Kong apply different visa policies, so China visa can only allow you to visit the places in mainland China. To visit Hong kong you need to apply for Hong Kong visa seperately. The good news is that Indian passport holders can stay in hong kong for up to 14 days without a visa.
In this case, you can enter Hong Kong without a visa while transiting. After, you can enter Xiamen with your China visa.
