Why Australian Chinese (汉族, born in XinJiang) have to provide the family invitation letter for applying the family visit visa to China, and the rest don't have to? If I can't provide the family invitation letters, what happens?

You have to provide the family invitation letter if the embassy/consulate asks for it. We can't get the reason from it, the embassy/consulate has full right to deny application without explaination. if you can't provide the invitation letter, the application will be denied.
