Well, you itinerary is OK.  It is a walking distance between Ngong Ping 360 and Giant buddha . From Ngong Ping 360, you can walk to Tung Chung Station to take Tung Chung Line to Lai King, then transfer to Tsuen Wan Line to Mong Kok and walk to the night market. From Disneyland to Mongkok, you can take Disneyland Resort to Sunny Bay and take Tung Chung Line there to Lai King, transforming to Tsuen Wan line to Mongkok.
