if you want to stay in HK for more than 90 days, you need to apply for a HK Visa in advance from HK immigration department, by post or through Chinese embassy/consulate or by someone you know in HK. But if you are not required air ticket for leaving HK when entry, you can also apply there before the 90-days visa free period ends.
