1. Do you mean the transportation from Hong Kong Airport to this hotel? If so, you could take bus A21 and get off at Man Ming Line, Nathan Road. Then, walking westwards along Man Ming Lane and turn to left at Shanghai Street, you will find the hotel on your left hand.
2. Yes, there are many kinds prepaid SIM card sold at these 7-Eleven convenience store, which could be found anywhere in Hong Kong. You could choose one upon arrival.
3. The Dorsett Seaview Hotel is located in walking distance to the Yau Ma Tei metro station, so you should take the metro to Central firstly and then walk or take a taxi to the Peak Tram Station. Here, you could take the tram up to the Peak.
4. The terminal should be Hong Kong Macau Ferry Terminal in Sheung Wan, where you could reach by metro or bus easily.
5. You'd better avoid weekends, and visit the park in the morning when it opens.
6. It is said the Ngong Ping cable car will be reopended after June 23, 2011. But, you could take bus 23 from Tung Chung to the Giant Buddha as well.
7. The most famous roast goose should be the Yung Kee Restaurant, which is located at 32-40 Wellington Street.
8. So many choices here, I think you could refer to this website's recommendations.
