Can I take a train directly from Xiamen to Hongkong ? If I am in Xiamen, where can I catch the train that travel the Beijing to Hongkong route?

Well, there are no direct trains from Xiamen to Hong Kong. By train, you could take one to Guangzhou first and then reach Hong Kong by a through train from Guangzhou. Besides, the train T97B from Beijing to Hong Kong is a through train without any stops during the journey.
