Hi,sir. I'd like to suggest you a doable itinerary with transportation for your trip in HK.
Day 1: Take metro from Mongkok station to Tung Chung, then walk to Ngong Ping 360 cable car terminal. After arriving at Ngong Ping Market by the cable car, walk about 5 minutes, you will find the Giant Buddha. Then take the cable car back to Tung Chung to take Tung Chung line to Sunny Bay and take the Disneyland Resort to Disneyland.
Day 2: Take metro from Mongkok station to Admiralty and transfer to bus 629 directly to ocean Park. Then back to Admiralty and take bus 15 to the peak. You can find the Madame Tussauds at 128, the peak road. After visiting the peak, you can take bus 15 back to Admiralty and then take metro Tsuen Wan line to Tsim Sha Tsui to visit the Avenue of Stars.
Day 3: Do shopping in Hong Kong.
For the entry tickets of those attractions, you can find the detailed information from this website: https://www.travelchinaguide.com/attraction/hongkong/ .

From Hong Kong to Shenzhen, you can go to Hung Hum to take East Rail train to Lo Wu, then pass through Luohu border, you will get into Shenzhen.

You can find a muslin restaurant named Ali Baba Curry House at 147 Portland St, Mongkok. A nice muslim restaurant in Shenzhen is Zhong Fa Yuan Muslim Restaurant which is at 83 Jingtian Lu, Futian District.
