No direct trains are available either from HK or Shenzhen to Xiamen. By train, you could transfer at Guangzhou. You can take a bus or train to Guangzhou first and then take train to Xiamen. Two trains are operating from Guangzhou to Xiamen. For the train schedule, you could search the details on the website.
