About:Chinese Consulate in Auckland

Hello,
I am a British citizen and would like to visit China on my round-the-world trip, arriving in June for 6 weeks. I would like to enter China from Vietnam, then visit Hong Kong, then travel up to Shanghai, fly to Japan for 2 weeks then return to Shanghai. I will then go to Beijing and get the Trans-Siberian Railway to Moscow. Will I need a multiple-entry visa?

I'm currently in New Zealand - would I be able to apply for my visa from Auckland? Is the Embassy open at the weekend?

Many thanks!
