Do you mean the Gondola Rides in Venetian? The fare is MOP108/adult and MOP80/child.

The Dorset Sea View Hotel in Hong Kong is located in walking-distance to the Temple Street, a famous night market where you could experience the local culture.

If you want to experience the little boats in Hong Kong, you can go to Chong Hing Water Sports Center at Sai Kung. I have no idea about the fee. You'd better go there to consult about it.
The nearest interesting place for you to go at night may be the Temple Street which is a famous night market in Hong Kong.

It is reported that Hong Kong and Macau will be controlled by cloudy days and the temperature is about 16C~20C. Not bad for traveling.
