About:

We will be traveling in China during August 2011. Is there a train similar to the Orient Express that travels from Beijing to Shanghai, also, when will the high speed train between the same two cities be available?

There are bullet trains between Shanghai and Beijing. You can take it from Shanghai Hongqiao Railway station.
The high speed train will be put into operation in 2012.
