Your itinerary is OK I think. Regarding hotel, I suggest my favorite; Nathan Hotel which is on Nathan Road, reasonably priced and very close to both Jordan MTR station, Temple Street night market, Ladies Market, etc. I would suggest purchasing an Airport Express Tourist Octopus card for convenience. It’s a 50HKD deposit which is paid back upon return with unlimited MTR travels for three days, 20 HKD stored value as well as one or two rides on the Airport Express. Alternately purchase an Octopus travel card with 50 HKD deposit and 100 HKD stored value.
Note!, the stored value on the Airport won’t cover both Ferry rides, entrance to the viewing platform on The Peek etc so you have to add.
When you go to Victoria Peek, first take the Star Ferry from Kowloon side over to HK Island. Not for convenience but for tradition and experience. Take the MTR from Jordan one station to Tsim Sha Tsui and walk to the Star Ferry terminus. From the Ferry terminus on HK Island, either walk or take a bus to Victoria Peek Tram station and take the Peek tram up. If you want a quicker route, just take the MTR to Central (three stations) and walk to the Peek Tram station.
I can also recommend Bubba Gump restaurant if you enjoy good western cuisine with a twist (the owner has purchased the rights to the props from the Forrest Gump movie and the serve the world’s best garlic bread!). Enjoy the view from the platform.
Day two, start around 9 from the hotel and take the MTR from Jordon to Lai King (towards Tsuen Wan). There change and go to Tung Chung (end station), use exit B and walk to the Ngong Ping 360 terminus (5 minutes). I prefer the Crystal cabin unless you are afraid of heights. The operation starts 10 am. From the Tung Chung station, go back to Sunny Bay (one station) and take the Disney train.
Day 3 is all up to you.
Have a good trip
