First regarding hotel check in, since you are staying at my favorite HK hotel, I know they are seldom impossible. If you call the Front Desk manager and ask them politely if you can check in earlier, it is rarely any problem as long as the room has been cleaned. If it’s not possible, I still suggest you go to the hotel first and use the luggage room. I explain the reason below.
When it comes to Ngong Ping 360, it’s both true and not. The village is on Lantau however the NP360 leaves from the Tung Chung Station which is not on Lantau island.
From the airport, you can take the S1 bus from HKIA leaving towards Tung Chung Station. The bus ride takes about 10 minutes. The NP360 is very close to the couch terminal.
However count on nearly a full day if you want to see all the attraction around Ngong Ping Village. It’s not only climbing the giant Buddha but also the shopping in NP Village, the monastery, the walking with Buddha experience (all done without any additional cost unless you want to enter the Giant Buddha), the Monkey theatre, etc.
With other words, taking the luggage alone can be a little troublesome in my opinion and it’s not really convenient to leave the luggage at the airport for later collection. I therefore suggest that you take the time and check in at the hotel (if it’s too early to get the room, use the luggage room) and take the MTR from Jordan northbound to Lia King (towards Tsuen Wan). There change to the Tung Chung line and go to the end station at Tung Chung Station, use exit B and walk two minutes to the NP360. I also suggest the extra cost of a Crystal Cabin unless you are afraid of heights since the experience, in my mind is worth the extra charge, at least on the way up
