we will be visiting HK and staying in The Kowloon Hotel from 18 to 28 Feb 2011, please advise: best travel cards to get, can it be purchased at the airport and used to travel to The Kowloon Hotel and return to airport by bus. Is the N21 bus correct? If this is not correct what is the most economical way to travel airport/hotel return and have ability to travel MTR, bus to say Stanley market, Star ferry etc, your advise is appreciated

You can buy a Hong Kong Octopus Card at the airport on arrival. You should take A21 from the airport to Kowloon Hotel if you arrive at the airport 06:00 - 24:00. You can take Bus no. 973 from TST to Stanley market directly, and you can just walk to Star ferry at TST, since it's only 5 minutes; walk from your hotel.
