About:Hong Kong MTR Tickets & Fares

My Husband and I will arrive evening of March 25th. Staying at Eaton Smart Hotel. Departing around 6pm on Monday 28th.
Would like to organise own sightseeing tour using public transport. It is best to purchase Octopus Card.
Any ideas on how to organise tour, would like to see Kowloon & Hong Kong Island. The peak tram, Victoria Harbour/Star Ferry. Repulse Bay, Aberdeen (boat ride) Ladies & Night market, symphony of lights. Would we have time to go to Lantan Island for short tour (ride the cable car)? or would it be best/cheaper to do an organised tour?

Would be very grateful for any suggestions, thank you.

I would like to give you some suggestion on your travel route:
Day 1: Ocean Park--Aberdeeb--Repulse Bay--Victoria Peak/harbour--symphony of lights--Avenue of Stars--Night markt, Temple street
Day 2: Ngong Ping 360, Giant Buddha at Latus Island; if you are interested in Disneyland, you can also go there for a visit.
Day 3: Do shopping at Mongkok area, Tsim Sha Tsui area, Ladies's Mark. You can also go to Central for dinning and shopping. Then leave for the airport.
In my opinion, it will be easy and cheaper to join an Hong Kong tour. You may refer to the tours on this website https://www.travelchinaguide.com/package/hongkong/ to make your plan.
