About:Chinese Consulate in Brisbane

I am taking a Princess Cruise calling to ports of HongKong for 2 days on 21 & 22 March 2011 and the port of Shanghai 1 day on 25 March 2011. Am I correct in understanding that I only need a Single Entry 3month Tourist Visa for Shanghai as I don't need visa for HongKong

Yes, you only need a 3 months single entry China tourist visa for Shanghai. You don't need to Hong Kong.
