About:Nightlife in Hong Kong

My husband and I will be celebrating our 16th wedding anniversary in HK and possibly Macau. We do not have specific itinerary yet, but we want to go to the Peak, Disneyland or Ocean Park, and Macau. We will be arriving around 1AM on Jan31 and leave HK around 9PM on Feb3, 2011. Can anyone help us plan our itinerary? We plan to stay at Dorsett Seaview Hotel. We will really appreciate any help extended to us. :)

I would like to give a possible itinerary of Hong Kong tour package(https://www.travelchinaguide.com/package/hongkong/) :
Jan 31: go to visit Disneyland, Ngong Ping 360 and the Giant Buddha
Feb 1: travel from HK to Macay
Feb 2: Go to visit Ocean park, the peak, madama Tussauds, Symphony of lights, avenue of stars, Temple street
Feb 3: You can go shopping at Tsim Sha Tsui area, Mong kok area or central area. Then back to the airport.

thank you, Mr. David for your suggestions. I am trying to work out the itinerary plus the budget. From the airport to the hotel, i learned that leaving the luggage even before checking-in will require a storage fee. so i tried to look for other hotel. evergreen hotel charges no fee as long as the stored luggage will be taken off during same day for checking-in at the hotel. I still have difficulty in planning out our itinerary as there are many possible ways.
