Hi, Sir, a single entry tourist visa is enough for your trip to Shanghai. You both are exempted from visa processing to HK and Macao. You just can submit your visa applications to Chinese Visa Application Service Center (CVASC) in Sydney. And it is ok your wife can handle it by herself.
