Hi, Ms Alec, I think Disneyland and Peak are too much for your first day. The bus way to get to the hotel from the airport is bus A21. Get off at Camaron Road, Nanthan Road. Get off the bus and just look for burlington Building nearby the bus stop. It takes about one hour and costs 33HKD. I don't think you can get to Disneyland from the hotel then before 10am. I think visiting the Peak in the afternoon to the evening soon. Nightscape is nice too. It is okay to get to the Peak on the first day too. If you come in Sunday, it is okay too. No admission fee to the Peak. You should pay for Peak Tram or the Wax Museum.
Avenue of Stars and Symphony of Light can be arrange at night. See the light show at Symphomy of Light at 8am. This can be finished after the Peak. So, you can have one day to do the rest of the things. Except Ladies Market and Temple Street, all of the attractions in the list is around Tsim Sha Tsui MTR Station within walking distance from you hotel. If you do not want to walk, just take a taxi. Space Museum - Art Museum - History Museum - Cultural Center - Clock Tower. Park Lane is just oppposite your hotel. You need to take MTR to Mongkok (Lady's Market, three stops by metro), Yau Ma Tei (temple street, two stops by metro) from TST. SOHO is a famous catering area in Central. You should not miss Yum Cha. Easy to find a small local restaurant to taste HK dim sum in TST. Lan Fong Yuen in Nanthan Road, Chung King Mansion is a famous one. It has good milk tea.
