Take bus 104 from Man Ming Lane Nanthan Road to Queen's Road west and then change bus to 973 to Stanley. The bus fare is nearly 16HKD. You can also try to take MTR from Yau Ma Tei to Central and then take bus 6 at Central Exchange Sqaure to Stanly Market directly. It will be faster.
You can take bus 3 at Wing Sing Lane to Nelson Street. Or take MTR for only one stop. Get out from D2 of Mongkok Station. If you have enough time, you can just walk.
Take bus 171 from Yau Ma Tei Man Ming Lane bus terminal to Tung Yat House of Lei Tung Estate. Then walk to the Jumbo Kingdom.

Airport express travel pass can not be used in bus. Your hotel is in Temple street. That is a night market with cheap food. You can also get to Lan Kwai Fong in Central. Safe to stay out late at night. If you travel alone, better go back to hotel early.

So what can I use to pay for bus fare?
What if I don't have enough coins? Can the driver give me change?

You can use Octopus Card(https://www.travelchinaguide.com/cityguides/hongkong/transportation/octopus-card.htm) to pay for bus fare.
There is little chance the driver will give you the change, better bring some with you or change some at the stores first.
