Yes, the travelers check of American Express, visa and master  could be exchanged at banks in China. Seldom hotels accept the Travelers Check.

Some hotels have exchange machines in the lobby and take no time. Others do it exchange in the reception area very quickly.
When you go to the bank is time consuming, that take time and many papers to fill, with the travelers checks is worse.
So take more cash and less travelers checks just in case of emergency.
