Hi, there is some answers from me:
to Disneyland: admission fee 350HKD for adult
Take MTR from Wan Chai to Central and then walk along the passageway to Hong Kong Station. Then take Tung Chung Line to Sunny Bay. Finally, change to special disney MTR line to disneyland. The cost is totally 24HKD.
To Ocean Park: admission fee: 250HKD for adult
Walk along Hennessy Road towards Causeway bay, then find the Marsh Road, Hennessy Road bus terminus to take bus 72 or 72A to Ocean Park Road, Wong Chuk Hang Road Station. Bus fare 4.7HKD.
Symphony of Light/Avenue of Stars: free of charge
You can take mtr to Admiralty and then change to Tsuen Wan Line to Tsim Sha Tsui. Walk through the passageway to Tsim Sha Tsui East Station and out from Exit J. Then walk 3 minutes to the Avenue of Stars. The MTR fare is 8.5HKD.
To Lantau island: this is not a specific location for the Disneyland is on the island too. If you mean Ngong Ping or Yai O, you should go to Tung Chung MTR Station first and then take cable or bus to these place. The MTR fare from Wan Chai to Tung Chung is 21HKD.
Temple Street is close to Yau Ma Tei MTR Station and Ladies' Street is next to Mongkok MTR Statioin, MTR fare is all 10.5HKD from Wan Chai (transfer via Admiralty).

There are special promotions and activities for the Christmas in shipping centers and parks in Hong Kong. Disneyland and Ocean Park will be busy that day. For shopping, there are many boutiques in Causeway Bay. TST is a comprehensive shpping area which means One-stop shop place.

You may add Victoria Peak, Stanley Market, Noah's Arch to your travel plan too.
