Two ways:
The faster way: take airport express way to Hong Kong MTR Station (HK$90), go through the underground passage to Central Station (around 10 minutes). Then take Island Line from Central to Causeway Bay (HK$5), get out at the exit near the Time Square and walk 10 minute to your hotel.

Take S1 airport shuttle bus from the HKIA to Tung Chung (HK$3.5), change Tung Chung Line to Hong Kong Station (HK$21), pass the underground passage and get to Central Station. Then take Island Line from Central to Causeway Bay(HK$5), get out at the exit near the Time Square and walk 10 minute to your hotel.

If you carry huge luggage, better take a taxi at Hong Kong MTR Station. It costs around HK$40.

From your hotel to Disneyland: go to Causeway Bay MTR Station, take Island Line to Central, pass the underground passage and get to Hong Kong Station. Then take Tung Chung Line to Sunny Bay, change Disneyland Resort Line to Disneyland. It takes around 42 minutes and costs HK$24.
