In terms of the history, the Peking duck is best for roasting due to its special breeding method. On the other hand, Nanjing is famous for Banya (a kind of pickled duck ) and Yanshui Duck. In Shanghai, you could find the Beer Duck and Jiang Duck in Hangzhou.
