It is suggested that you book a hotel in Wan Cai or Causway Bay area. To disneyland, you could take the metro. To Macau, you could take a bus or metro to Sheung Wan Terminal in several minutes and then take a ferry to Macau.
There are many good hotels in these regions, you could find one easily online. My suggestions are the Empire HK, Metropark Hotel Wan Chai, the Charterhouse and so on.

You can visit the Senado Square, that is the central and old part of Macau. For casino, Hotel Lisboa nearby Senado is very famous. Another one, Venetain in Taipa Island is also great too. If you travel alone, better not to come bacl too late. It is safe anyway.
