For disneyland, just take MTR from Tsuen Wan station to Disneyland.
For ocean park, take MTR from Tsuen Wan station to Admiralty and then take bus 629.
For Big Buddha, ride on MTR from Tsuen Wan to Tung Chung and then take Ngong Ping 360.
For Victoria Peak, still MTR first from Tsuen Wan to Central. Get on bus 15C at Central Pier 6 to Peak Terminus and then take peak tram.

As you can see the way to Victoria Peak from the above answer, Madam Tussauds is there in the Peak, so I can tell the way to Lantau, and except Disneyland. Take MYT from Tsuen Wan Station to Tung Chung, then you can take cable or bus to Ngong ping. You didn't figure out where you are going to visit specifically in Lantau Island. For dining, around Tsuen Wan, where the hotel is located? Around Tsuen Wan Market street, Chung On Street area and turn to Tsen Wan Plaza, Citywalk shopping centers for food. In the city center, Tsim Sha Tsui, Causeway Bay and Wanchai areas all have many delicious food to try.
