About:Chinese Embasy in Ireland

Does anyone know what documents are required for UK passport holder to apply for tourist visa in Dublin? My husband and I live in Cork but we do not work anymore. They want residence and work permits, but as British citizens we do not have or need those. Consulate replied and said a recent P60 would do, but that is also no good as we have never worked in Ireland and were both previously self-employed.
