Your itinerary is definitely eligible for 240 hour visa free transit and you do not need any kind of visa. Here I will emphasize two details. At the very moment of taking a train from Hong Kong West Kowloon station toward Shenzhen you will have to have your Shanghai to Hanoi flight ticket already bought because you will be asked to present it there. Also, you should arrive at West Kowloon station at least 90 minutes ahead of your train departure, but it is even better to arrive 120 minutes ahead of train departure because both Hong Kong exit and mainland Chinese entry formalities are performed at that same place.

Second detail is the fact that your flight from Shanghai to Hanoi is not allowed to have a landing in Hong Kong of any kind, so keep an eye on this detail when booking your flight ticket. One more detail... I advise you to take a train from West Kowloon station to Futian station in Shenzhen because Futian station is the most centrally located Shenzhen station compared to the rest of them. Have a nice visit to China.
