Your idea is definitely eligible for 240 hour visa free transit, but you will have to do it with some minor changes:
1. Take a train from Hong Kong to Guangzhou
2. You cannot take a train from Guangzhou to Macau because there is no direct train connection between them and you need a ticket that will take you from mainland China to Macau. The solution is to take a ferry operated by TurboJet from Shekou port in Shenzhen to Macau. Please, remember, you really need to buy this ticket before you depart from Hong Kong toward Guangzhou.
3. Ferry to Hong Kong
It is essential to understand that you will perform all the formalities (exit from Hong Kong and entry into mainland China) at Hong Kong West Kowloon station, so it is essential to arrive at the station roughly 90 to 120 minutes ahead of your planned train departure. Here you will fill out Chinese arrival card, perform fingerprinting at automatic fingerprinting machine, approach 24/240 hour visa free transit counter to obtain a temporary entry permit, free of charge. When you have done that you will cross the mainland Chinese immigration and head to the platform to catch the train for Guangzhou. When you sit in the train there are no more formalities.
