You do not need a visa for your entire itinerary. You can travel relaxed. Your first segment:
London - Beijing - Xi'an - Shanghai - Hong Kong
Is a textbook example of eligible 240 hour visa free transit itinerary. Your second segment:
Hong Kong - London (with a stopover in Beijing)
Is also covered by visa free scheme, but in this case by 24 hour visa free transit. So, you do not need a visa at all, guaranteed.
During your first segment, upon your landing in Beijing you will fill out arrival card and write the name of your hotel in the segment where it is written an address in China. After that you will perform fingerprinting at automatic fingerprinting machines and then approach 24/240 hour visa free transit counter where you will present your flight tickets and the most important one is your exit ticket from mainland China to Hong Kong. You will be then granted a temporary entry permit in your passports and you will finally head to the immigration and then formally enter China to enjoy your travel plan. During your second segment (upon landing in Beijing) you do not have to perform any formality nor fill out any forms. You will just walk from one to the other gate and remain within the transit area of Beijing airport. Also, you will not be a subject of immigration or customs inspections. One more detail... It is important to use correct terminology, so this is not 240 hours transit visa, but 240 hour visa free transit, so there is no visa of any kind at all. Have a wonderful visit to China.
