Unfortunately, this is not possible. The rule that is strictly implemented clearly states that the immediate points before and after mainland China have to be in two different countries or eligible territories. Eligible territories are Hong Kong, Taiwan and Macau. In other words, a flight Vietnam - mainland China - Vietnam is not considered a transit and to perform such an itinerary a Chinese visa obtained in advance is a must.
You can be somewhat creative and insert, for example, Hong Kong into your flight itinerary and create an eligible one, for example:
Vietnam - Shanghai - Hong Kong - Vietnam
As you can see, in this case the immediate points would be in Vietnam and Hong Kong, so this is eligible for 240 hour visa free transit scheme and you do not need any kind of visa.
