Yes, Vietnam - Hong Kong - Shenzhen - Vietnam is definitely eligible for 240 hour visa free transit, but you will have to enter mainland China by ferry only from Hong Kong to Shekou in Shenzhen. You will need your Vietnam bound ticket from Shenzhen or some other place in mainland China ready at hand at the time of boarding the ferry from Hong Kong to Shekou. Also, since you have entered from Hong Kong, you are not allowed to return directly from mainland China to Hong Kong. Your direct departure to Vietnam is fine. Jake, this is not a visa, but 240 hour visa free transit. So, if Shenzhen is your first stop in mainland China, for example, by a direct flight from Vietnam, of course, you will be granted a temporary entry permit and you will enjoy 240 hour visa free transit, but you will then have to exit to a third country/territory and that means you are not allowed to travel directly back to Vietnam, but you have to leave mainland China for a third country/territory.
